The artichoke is actually a species of thistle; the delicious part that you eat is the bud before the flower blooms.  Much like broccoli, if you wait to long to eat it the plant will be barely edible (although some would argue that broccoli is barely edible either way).

Artichokes are native to the Mediterranean area, but have obviously successfully made their way around the globe.
